More Than One Way to Slice a Jalapeño

What do you do when your buddy Timmy gives you four 5-gallon buckets of jalapeños? You get creative with jalapeño.

Never one to look a gift horse in the mouth, Hubby took Timmy up on the offer to pick some peppers, cucumbers, zucchini, and squash from his massive garden late this past summer. I was excited about the fresh produce and eager to give at least one new recipe a try. Little did I know I would soon be up to my eyeballs in stems, seeds, and researching ways to preserve the plentiful peppers.

Each day I spent 2 hours slicing and seeding peppers by hand for the first two or three days. These carefully crafted slices went into pickled jalapeños. Of course, I wore gloves to protect my skin from the spicy juices but my hands and wrists started to get a little worn out by Day 3. I pulled out my little Pampered Chef food processor and started blending away at the buckets of peppers, but didn’t make much headway because of the blender’s small capacity. Plus, I had moved on to trying a second new recipe. This time I was attempting to make jalapeño relish, and we weren’t too sure if we would like it or use it much. (*We did like it. ** We used it a lot.)

Hubby asked why I didn’t have a bigger blender. I told him because Santa hadn’t brought it yet. Well, Santa came in August with a fancyshmancy, BIG blender. It was going to be perfect for peppers, zucchini, slaw, all the things…. but it was really BIG. The jalapenos were plentiful but petite. This is when we really had to shake things up with how we sliced our peppers.

Fairy Garden Dreams Become Reality (pixie dust not required)

Three years ago my children saw the Tinkerbell movie and began planning to make a fairy garden. Well, this year we finally made it happen!

This is one of those magical projects that brought my kids and I together in a successful collaboration of creativity.

The local dollar store provided adorable and affordable garden decor and my good friends at Dudenhoeffer’s Countryside Gardens offered the sweetest little plants for our flowery festivities.

Even though each of my children started out with roughly the same tools and supplies, fairy garden girlthey each created a unique and whimsical fairy garden. The garden of each child was an terrific representation of their personalities.

There were two things that I really loved about this project.

  1. My kids played in the dirt and made something cool. It doesn’t get any better than that!
  2. I was able to witness my children’s imagination at work. There is nothing more inspiring and motivating than pure, childlike awe and excitement. I honestly wish I had made a garden for myself. Tapping into that innocence and creativity would do anyone’s heart some good.

While we know fairies aren’t real, it is important to remember that nurturing the ideas and wishes of our children is a very real and necessary element of life. Providing opportunities to dream and create is something that benefits all of us.

The fairy gardens are beautifully displayed along our front walk. They bring smiles to the faces of everyone who comes to our home and provide a tremendous sense of pride for my children. I have caught each of them peeking at their gardens wondering if the fairies had visited. Their awe and wonder is so sweet.

I encourage you to take time to create something with those you love. Share your dreams and imagine together. You don’t have to build a garden to create something that lasts. The longest lasting part might be the memories you make, but those memories are magical. They can appear anytime you choose.

Believe in the magic of time spent together. Allow yourself to be inspired by the imagination that is shared. Put your intent into building energy that grows love and memories. It doesn’t require more than a little faith and trust (pixie dust not required.)

Vegetables shared with us from our aunt and uncle. Potatoes provided by my father-in-law. Bananas and oranges from the grocery store.

We have an aunt and uncle who garden. By garden I don’t mean a few raised beds and a couple of hanging baskets on the front porch. I mean they GARDEN. Each year they plant four or five vegetable gardens.

They start the seeds in February or March in their home and then transplant them into the long, tilled rows of their various produce fields. They grow sweet corn, tomatoes, cucumbers, eggplant, lettuce, potatoes, zucchini, squash, peppers, and more. Their bounty flourishes with their generosity towards us.

As the summer months roll along, I often come home to find a pile of zucchini or corn inside the front door. Sometimes there will be a bucket of tomatoes or a bag of cucumbers on the front porch. We are SO blessed that they share their garden goodies with us!

To show our thanks, I often bake them zucchini bread or angel food cake (Uncle loves this.) Sometimes I will take them a turkey dish or just sent a thank you card. This is all they ever allow me to do in the form of payment for the awesome summer treats.

Summertime really does provide a feast for us (thanks to Aunt and Uncle’s labors and kindness).

It doesn’t always take a box of tomatoes or a bag of sweet corn for us to feast on the blessings our loved ones provide for us. People in our lives grace us with tremendous gifts each day. Take time to identify and realize the wonderful ways your life is enhanced because of the actions your friends and family make.

Take time today to thank someone in your life for the blessings they serve you. Say a prayer of thanksgiving for the opportunities provided to you by your parents or friends. Make plans to do something that shows your gratitude for someone you care about.

Put your energy into positively pursuing your intents of gratitude, and you will surely find yourself feasting on love and added blessings.
